Rainbow Creole will become the newest item on the Greenville County school lunch menu. Sarah Walker, a fourth grader at A.J. Whittenberg Elementary, came up with the recipe.
Sarah is the winner of the 2015 Healthy School Lunch Throwdown. The competition was held at the Euphoria food festival in downtown Greenville. Sarah was one of four finalists selected by the Director of Food and Nutrition Services for Greenville County Schools. She cooked the recipe on stage at Euphoria with the assistance of a professional chef.
Sarah’s Rainbow Creole recipe was chosen by a panel of judges. Sarah’s Rainbow Creole recipe was chosen by a panel of judges. The creole contains chicken, bacon, tomato soup, peppers and onions and is served over rice.
The recipe will be modified to meet school lunch guidelines. Sarah will be allowed to taste test the final version before it is served.
